Marinated with History

Chef Jose spent his childhood barbecuing with his family every summer. Building fire pits and cooking over open flames became an integral part of his family time spent together. He was the one who cooked on the grill, always testing the long-burning embers and learning how to work with the most tender meats, freshest fish and local spices. What flavors!

Taste the Tradition

Natural and simple foods are selected daily from farm and ocean dock and brought back for preparation to serve at our community style tables. Sip great wines paired with slow cooked meats or enjoy the catch of the day (sometimes reeled in by the chef himself). You may want to even sneak a peek of the cooking process throughout the day when you wander by and smell the mouth-watering flavors.

About Chef Jose Lopez

Born in San Jose, Costa Rica, Chef Jose Lopez has established himself as a leading connoisseur of his country’s culinary identity–a melting pot of European, African and Meso-American influences. He has spent his career championing Costa Rica’s indigenous products, flavors, and culinary traditions, while actively advocating for the preservation of the natural resources and beauty of his country.

“The idea of a new kind of Costa Rican restaurant began to take shape. A place where everything is cooked over a fire, just like our ancestors did. Calling upon generations of old recipes, it became clear I could create a menu just using fire. No electricity required!“
~ Chef Jose
