We invite guests and locals alike to join us for a community dining experience using only the freshest, most wholesome, locally-sourced ingredients. We prepare our traditional Costa Rican dishes like our ancestors did, over an open fire, and join together to eat in a social atmosphere. This is the perfect environment for like-minded explorers to dine and discuss the wonders of wanderlust.

Come discover age-old techniques and taste the flavors of our heritage at Brasas del Mar, located within Casa Chameleon Hotel at Mal Pais. All overnight guests receive breakfast and their choice of either lunch or dinner daily as part of their stay.

Chef Jose spent his childhood barbecuing with his family every summer. Building fire pits and cooking over open flames became an integral part of his family time spent together. He was the one who cooked on the grill, always testing the long-burning embers and learning how to work with the most tender meats, freshest fish and local spices. During this period, he learned that the truest measure of a meal is the company you share it with. We want all of our guests to experience the joy of community, just like Chef Jose. We encourage you to mingle with friends both new and old, while our chefs prepare daily catches and delights.

Taste the Tradition

Natural, simple foods are selected daily from the nearby farms and seaside docks and brought back to be prepared and served at our community style tables. With each stay, we’ve included daily breakfast and your choice of lunch or dinner. No matter what you decide, be prepared to share the tastes of Costa Rica with people from around the globe. You may even want to sneak a peek of the cooking process throughout the day when you wander by and smell the mouth-watering flavors.

About Chef Jose Lopez

Born in San Jose, Costa Rica, Chef Jose Lopez has established himself as a leading connoisseur of his country’s culinary identity–a melting pot of European, African and Meso-American influences. He has spent his career championing Costa Rica’s indigenous products, flavors, and culinary traditions, while actively advocating for the preservation of the natural resources and beauty of his country.

Dining Events

Set menu of 8 to 10 options + 1 or 2 daily specials. Communal dining for up to 20 people per night.

BBQ Event:

A culturally rich experience to be remembered. Enjoy this Costa Rican barbecue where the timing is perfected, the people create the setting and the tastes are something to be savored.

Sample dishes offered:

  • Whole fish, or whole fish fillet
  • Whole chicken
  • Pork ribs with pancetta
  • Lamb arm, leg, or cutlets
  • Beef short ribs
  • NY strip or ribeye
  • Sweetbreads
  • Picahna
  • Skirt steak
  • “S’mores” dessert, so guests can participate in the “finale” of the event
  • Digestif or dessert wine

Seafood Feast Event

Experience a tasting of fresh fish and seafood from local waters, caught on the same day of the tasting. If you’re in the right place at the right time, you might even be invited on the fishing trip during the day.

Sample dishes offered:

  • Sashimi
  • Ceviche
  • Tuna appetizer or small chowder-broth
  • Seafood appetizer or 1/2 main dish (octopus, shrimp, or calamari)
  • Fish / 100 gram fillet
  • Small dessert

Fish options might include: Mahi-Mahi, Seabass, Grouper, Red Snapper, Amberjack, Yellowfin Tuna, Barracuda, Mackerel, and Snook

Daily breakfast and either lunch or dinner are included with all reservations. An additional fee applies for outside guests and guests who choose to enjoy three meals at Brasas del Mar per day.

Check-in: 3 p.m. Check-out: 11 a.m.
Departure day is never fun, so we make it as easy as possible. Our office will send your invoice statement to your e-mail adress the night before check-out.
