Our Chef, Pabrö Sánchez loves to fish. He’s often found out on the boats in the morning in front of Casa Chameleon catching amazing seafood, and then back in the kitchen preparing a delicious fresh fish for dinner.
He’s super passionate about using local ingredients, and also staying true to the traditions of the native indigenous people. Our guests love his style of cooking so much, we decided to find out exactly how he prepares one of his favorite fish recipes, so you too can try it at home.
First, Chef Pabrö heads out for a morning on the water, and if he’s lucky, he’ll land one of these amazing fish! Costa Rica is blessed to have incredible fish and seafood, and to be able to catch it in the morning and have it on the plate at night, is a true treat!
He then preps the fish and cuts it into filets or steaks — paying careful attention to the vertebrae of the fish to guide him.
Up next, he coats the fish in a homemade flour made from walnuts, salt, pepper, chili flakes and lime zest. They go into a hot pan to quickly sear, and then into a roasting pan with some fresh lime juice, salt and pepper, butter and cherry tomatoes.
A low, slow oven cooks this fish perfectly, and after 45 mins at 250F you’ll have the most amazing smells wafting from your kitchen. Your guests will be ready to dig in to this delicious fresh fish dinner!
You can pair this fish with roasted root vegetables, a fresh salad of arugula dressed with olive oil, salt and lime and a drizzle of Passion Fruit Coulis — (Mix finely chopped white onion, roasted garlic, paprika, fresh passionfruit juice, a little mustard, dash of sugar and salt and pepper to taste)
